Quinoa Turkey Meatballs RECIPE

Hey Mamas,

I rarely create recipes, but lately I’ve been having fun making minor better-for-ya tweaks, to meals my family already loves.

Side note – it’s so great to be able to cook dishes everyone eats! No more just us and just the kids food. Is anyone else thrilled to be in the phase of motherhood? !!

This week, I make my Quinoa Turkey Meatballs. It’s a tweak to a fantastic recipe Jessica Alba shared on the Martha Stewart show.

Her yummy secret is cooking the turkey meatballs in broth. It adds tons of flavor and rich vitamins, plus the wellness-boosting benefits of collagen to your dinner.

When I don’t have my homemade broth (and that’s actually rare, as we grew up with bouillon as a staple in my Russian family) I use Bru Broth.

Unlike the stock you find in the grocery aisle, Bru is low in social, cold-presses broth, which is infused withnutritious veggies and spices. You get added flavors and spices, so make sure to pick one you know the family will like. We love Hug in a Mug and Turmeric Ginger.

Quinoa Turkey Meatballs – INGREDIENTS

  • 2 pounds lean ground turkey
  • 1 cup panko (You can also crush GG Crackers for added fiber)
  • 1/4 cup finely chopped carrots
  • 1/4 cup cooked quinoa
  • 1/4 cup finely chopped onion
  • 2 large eggs
  • 2 tablespoons Italian seasoning
  • 1 tablespoon Himalayan sea salt
  • 2 tablespoons olive oil

Quinoa Turkey Meatballs – DIRECTIONS

  1. Cook quinoa.
  2. In a large bowl, mix turkey, panko, carrots, quinoa, onion, eggs, Italian seasoning, and salt.
  3. Form into 1-inch balls. You should get  about 20.
  4. Heat olive oil in a large skillet over medium heat. Add meatballs and cook and keep turning, until lightly browned, about 5 minutes.
  5. Add 1/2 cup chicken broth; cover and reduce heat to low. Cook until liquid is nearly fully absorbed, about 10 minutes. Add remaining 1/4 cup broth and increase heat to medium; cook, uncovered, until liquid is absorbed.

With the weather dipping to near 10°C, today, here in New York City, I wanted to share a cozy drink that will add extra warmth and pampering to your Mom Sunday Spa Night – a Collagen Latte.

Below is a recipe for my Coconut Collagen Latte.

I had the pleasure of speaking with SJP, this week, thanks to an intimate gathering hosted by Denise Albert and Melissa Gerstein of The Moms  (total #hustlelikeamom afternoon !!) and I was so impressed, as always, with Sarah Jessica Parker’s ability to make the person she was speaking to, feel like they were the most important person in the room.

That’s what she does in person, and what she does in her role as Frances on HBO’s Divorce. She speaks to you, she makes you want to understand her story, her decision to file for divorce, her emotional journey.

I’m adding DIVORCE to my Mom Sunday Spa Night because the show is truly a reminder to love yourself, listen to your gut, fight for your joy, and never forget that it was “just us two” i.e. husband and wife, before it was mom+dad+kids.

As one of the other guests at lunch pointed out, watching DIVOCE can actually save a marriage. Hmm….

“The idea of liberation is very different than the actual experience,” Sarah Jessica explained, at our lunch. As star and executive producer of Divorce, she added that, “We fight [to show] the unpleasantness of divorce and life because it’s fun to play it” and it makes the show more real.

“The more people are candid and decent when describing experiences, the better off we will be.”

And with that morsel of goodness, my decent and delicious collagen latte recipe.

COCONUT COLLAGEN LATTE

Collagen Latte Ingredients

  • 1 Scoop Vital Proteins Collagen Creamer, Coconut
  • 6 oz cup of brewed coffee (I LOVE Cafe Bustelo)
  • 3 oz plus 1 oz milk or non-dairy milk (I use Almond unsweetened)
  • 1 teaspoon coconut oil
  • Cinnamon or nutmeg, to taste

Collagen Latte Instructions

  1. Add coffee, 3 oz. of milk, coconut oil, and Collagen Creamer into a blender.
  2. Blend until creamy.
  3. Pour the remaining 1 oz. of milk into a mason jar. Screw on the lid and shake until froth. Or use a hand-held frother, if you have one at home.
  4. Microwave on high for about 30 seconds. This will harden the froth. (I don’t own a microwave so I skip this step)
  5. Spoon the froth over the latte, and sprinkle with cinnamon or nutmeg if using.

Bone broth, it’s the latest buzz for wellness warriors and beauty buffs. You need a good, simple bone broth recipe in your cooking repertoire.

My Baba (that’s Russian for “grandma”) Emma swears by bone broth.

What’s so special about bone broth, and why is every doctor, health expert and beauty blogger buzzing about it?

Collagen!

As I mentioned in last week’s blog post “3 Wellness Trends Worth Trying”, collagen is the most abundant protein in our body – basically like the “glue” that holds everything together. As we age, our bodies produce less and less of this magical substance. Less collagen equals saggy skin, wrinkles, loss of bone density, brittle hair, chipping nails, even gut-health issues.

Back when most Americans actually cooked more at home – bone broth included – our diet provided us with the boost of collagen our bodies no longer produced. Sadly, many now turn to stock broth from the grocery store, as opposed to making their own broth – that stock was likely not made on a bone, and it’s loaded with sodium.

To be perfectly honest, I only began to make my grandma’s bone broth recipe when my kids were born. Baba Emma, my mom and my mother-in-law used to make it for my husband and I, back in the good-old days. Okay, sometimes, they still make it for us! But, these days, I’m in on the action, as well. I’ve even recruited helpers.

At first, I had no idea how to start. Sadly, I never took the time to watch my baba make her bone broth recipe for us. I simply devoured the goods. Fortunately, my 92-year-old grandma was kind enough to share her recipe with me. It’s actually quite easy, and not as time-consuming as other recipes.

Yes, you can simmer your meat and bones on low for over 24-hours. But, seriously, is that ever going to happen in your life? It sure as heck isn’t going to be an option for me. #LetsBeReasonable

Grandma’s Homemade Chicken Bone Broth Recipe

Ingredients

8 Chicken Drumstick and Thighs (Bells & Even is the best store options – if you live on a farm, lucky you)

4 Medium Carrots, cut into threes

1 Large Parsnip, cut in half

1 Yellow Onion

1 Celery Stick, cut in half

Salt (to taste – trust: this is often where I need to phone-a-mom, my salt taste is terrible, hopefully yours is better)

Directions

Wash chicken and put into a deep pot. (I love Le Creuset 8qt Stock Pot because, aside from the beautiful enamel finish, you just get the best results with anything you make – even if you’re a faux-cook, like me. The $100 price tag pays for itself in yumminess and longevity of product.)

Back to the broth. Cover the meat with water and put on medium to high temp. Skim off anything that floats to the top. Once water boils, remove pot from heat and strain water out.

Gently wash the chicken. Put chicken back into the pot. Add whole onion, carrots, parsnip and celery. Pour already boiled water (I usually do it in the teapot) over chicken and vegetables. Turn stove to medium temp.

Keep skimming off fat and other impurities that float to the top, until the broth is clear. Then, turn  temperature to smallest flame, and let cook for 2 hours.
